Regional products

In the region, you may enjoy many domectic products: honey, cheese, meats, etc. The main products are the following:

 

  • The Saint-Nectaire : a AOC cheese known for its flexible pulp and mellow. Its production is done in the Monts-Dore area, a territory extending over 72 municipalities in the Puy-de-Dome and the Cantal, located in a volcanic area . The cheese can be eaten as an accompaniment to various types of dishes, particularly in pies and brioches.

 

  • The Cantal: a pressed cheese AOC . Its characteristical shape is a cylinder with a 36 to 42 cm diameter, and with a weight of 35 to 45 kg. Its production area extends over the entire Cantal area of , as well as a share of the Puy-de-Dome, the Correze and the Aveyron.

 

  • The gentian liquor: an aperitif drink manufactured by macerating and distillating the roots of the Yellow gentian of Auvergne. This plant is found in various mountain massifs Europeans, and particularly in the Massif Central.

 

  • The truffade: a typical dish of Auvergne which is prepared from fresh tomme de Cantal (cheese), bacon and potatoes. This cheese is typically rich and was wel suited for hardworking shepherds and peasants in the Auvergne in the past.
